Caribbean Style Barbecue Chicken
What you need:
Saucy Cajun Grilled Chicken
one 1/2 skinless & boneless chicken breasts
two cloves garlic, minced
1/4 cup fresh orange juice
one tbsp. fresh lime juice
one tbsp. olive oil
one tsp. orange zest
one tsp. minced ginger
1/2 tsp. chopped fresh oregano
1/4 tsp. hot sauce
To make the marinade, merge garlic, orange juice, lime juice, olive oil, orange zest, ginger, oregano & hot sauce in a blender. Blend until smooth. Pour the marinade a huge re-sealable plastic bag then add chicken breast. Shake the bag to coat then refrigerate for two hours up to overnight. When prepared, remove the chicken from the bag & discard excess marinade. Cook in a pre-heated grill over medium-high heat for 6-8 minutes per side or when cooked through. Serve with a side of steamed mixed vegetables if desired.

two boneless & skinless chicken breasts, frozen
1/4 head cabbage, shredded
one carrot, thinly sliced
one tiny white onion, cut in to rings
two 1/2 cups barbecue sauce
one cup Italian-style salad dressing
Make positive all vegetables are properly washed. They can be used fresh for this recipe or steamed depending on your preference. Mix together cabbage, carrots & onions in a medium bowl. Pour half of the barbecue sauce over the vegetables. Set aside. Place the frozen chicken in a huge re-sealable plastic then pour salad dressing over it. Refrigerate until thawed. When prepared, discard excess marinade & cook chicken in a pre-heated grill over medium-high heat for five minutes per side or until barely completed. Brush with remaining barbecue sauce & grill for a couple of minutes more until cooked through. Transfer to a serving dish, top with barbecue sauce with fresh or steamed vegetables & serve.

four boneless & skinless chicken breast halves
one cup fresh lemon juice
one cup vegetable oil
one cup Worcestershire sauce
one tsp. garlic powder
Merge lemon juice, vegetable oil, Worcestershire sauce & garlic powder in a tiny bowl. Mix until all ingredients are well-blended. Place chicken breasts in a lager bowl & pour lemon mixture over it. Toss to coat. Cover & refrigerate for at least 6 hours. When prepared, discard excess marinade & cook chicken in a pre-heated grill over medium-high heat for 6-8 minutes per side or until cooked through. Serve warm.
