Chicken Breasts Glazed with Hot Pepper Jelly Sauce
one chicken breast, halved, boneless & skinless
½ teaspoon Dijon mustard
two Tablespoons unsalted butter

Salt & freshly ground pepper
two medium celery ribs, cut in to matchsticks
one tablespoon fresh lemon juice
one tablespoon coarsely chopped celery leaves
Pound the chicken breasts to an even thickness.
Merge the pepper jelly & the mustard, set aside
Season the chicken with salt & pepper.
In a immense skillet, melt the butter over medium high heat. Add the chicken breasts & cook, turning one time, until they are browned, about three minutes per side.
Pour off most of the fat. Add one tablespoon of water & stir to loosen the browned bits on the bottom.
